It’s often sarcastically said that colonialism can be forgiven because the British left us the railways, but we’re dead serious when we say that Puducherry is probably glad that the French were in charge for a while. If nothing else, they left behind their world-famous cuisine when they left. The flavours of this quiet seaside town are heavily influenced by French and Tamilian culture, which go surprisingly well together. It wouldn’t be a stretch to say that the food here is a major tourist attraction, so make the most of it and dig into that Lobster Thermidor, Poisson Provencale and Creole Crevette the next time you’re visiting. And, much like its sister states in that region of the country, Kerala has been bit by the biriyani bug too. So, if you’re visiting the capital city, make sure that you try out the famous Prawn Malabar Biriyani for a flavour profile you aren’t going to forget in a hurry. But, if you’re the adventurous sort, we recommend the Kappa Puzhukku – a unique combination of tapioca and tangy fish that will make your taste buds sing.

With stellar dishes like Tangra Macher Jhol, Sorshe Iilish and Chingri Malai Curry, it’s no surprise that Bengal is considered one of the smartest regions in the country
